Double Chocolate Cookies - THE BEST

These double chocolate cookies are everything you want in a sweet treat — rich, fudgy, and loaded with chocolate in every bite. They're crisp around the edges, soft and gooey in the middle, and taste like a brownie and a cookie had the perfect little baby. Made with cocoa powder and melty dark chocolate chunks, they’re deeply chocolatey without being too sweet. They're the kind of cookie you make once and immediately add to your regular rotation — especially if you love a no-fuss, crowd-pleasing recipe that feels a little indulgent but still easy enough for a weekday bake.

Ingredients:

  • 1/2 cup (115g) unsalted butter, softened

  • 1/2 cup (100g) white sugar

  • 1/2 cup (100g) brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup (220g) plain/all-purpose flour

  • 1/2 cup (45g) cocoa powder (Dutch-processed or unsweetened)

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup (170g) dark or semi-sweet chocolate chips or chunks

  • Optional: sea salt flakes for topping

Instructions:

  1. Preheat oven:
    To 175°C (350°F). Line a baking tray with baking paper.

  2. Cream butter and sugars:
    In a bowl, beat butter, white sugar, and brown sugar until light and fluffy (about 2–3 mins).

  3. Add wet ingredients:
    Mix in the egg and vanilla until well combined.

  4. Add dry ingredients:
    Sift in flour, cocoa powder, baking soda, and salt. Mix until a thick dough forms.

  5. Fold in chocolate:
    Stir in chocolate chips or chunks.

  6. Scoop & bake:
    Scoop 1–2 tbsp balls of dough onto the tray (space apart). Bake for 9–11 minutes — they’ll look soft in the middle but set as they cool.

  7. Optional:
    Sprinkle with sea salt flakes while still warm.
