Raw Honey Toasted Grain-Free Crunchy Granola


Ingredients

  • 1 cup almonds (roughly chopped)

  • ½ cup cashews (roughly chopped)

  • ½ cup walnuts or pecans (roughly chopped)

  • ½ cup shredded coconut (unsweetened)

  • ¼ cup pumpkin seeds (pepitas)

  • 2 tbsp chia seeds

  • 2 tbsp flaxseeds (whole or ground)

  • 1 tsp cinnamon

  • ¼ tsp sea salt

  • ¼ cup coconut oil (melted)

  • ¼ cup maple syrup or raw honey

  • 1 tsp vanilla extract

Optional add-ins after baking:

  • ¼ cup cacao nibs or dark chocolate chips

  • ¼ cup dried fruit (e.g. cranberries, chopped dates, or goji berries)

Instructions

  1. Preheat oven to 160°C (320°F). Line a baking tray with baking paper.

  2. Mix dry ingredients:
    In a large bowl, combine chopped nuts, seeds, shredded coconut, cinnamon, and salt.

  3. Add wet ingredients:
    Stir in melted coconut oil, maple syrup (or honey), and vanilla until everything is evenly coated.

  4. Spread & bake:
    Spread the mixture onto the baking tray in a thin, even layer. Press it down gently with a spatula—this helps it cluster.

  5. Bake for 20–25 minutes, stirring once around the 15-minute mark to avoid burning the edges. Watch closely toward the end—golden brown is perfect!

  6. Cool completely:
    Let it cool fully on the tray—it’ll crisp up as it cools. Then break into chunks or crumble as desired.

  7. Add extras (optional):
    Stir through chocolate or dried fruit once cool.

This granola is super adaptable—use whatever nuts/seeds you have on hand. It’s naturally gluten-free, dairy-free, and paleo-friendly.
