Raw Honey Toasted Grain-Free Crunchy Granola
Ingredients
1 cup almonds (roughly chopped)
½ cup cashews (roughly chopped)
½ cup walnuts or pecans (roughly chopped)
½ cup shredded coconut (unsweetened)
¼ cup pumpkin seeds (pepitas)
2 tbsp chia seeds
2 tbsp flaxseeds (whole or ground)
1 tsp cinnamon
¼ tsp sea salt
¼ cup coconut oil (melted)
¼ cup maple syrup or raw honey
1 tsp vanilla extract
Optional add-ins after baking:
¼ cup cacao nibs or dark chocolate chips
¼ cup dried fruit (e.g. cranberries, chopped dates, or goji berries)
Instructions
Preheat oven to 160°C (320°F). Line a baking tray with baking paper.
Mix dry ingredients:
In a large bowl, combine chopped nuts, seeds, shredded coconut, cinnamon, and salt.Add wet ingredients:
Stir in melted coconut oil, maple syrup (or honey), and vanilla until everything is evenly coated.Spread & bake:
Spread the mixture onto the baking tray in a thin, even layer. Press it down gently with a spatula—this helps it cluster.Bake for 20–25 minutes, stirring once around the 15-minute mark to avoid burning the edges. Watch closely toward the end—golden brown is perfect!
Cool completely:
Let it cool fully on the tray—it’ll crisp up as it cools. Then break into chunks or crumble as desired.Add extras (optional):
Stir through chocolate or dried fruit once cool.
This granola is super adaptable—use whatever nuts/seeds you have on hand. It’s naturally gluten-free, dairy-free, and paleo-friendly.
