Rustic Apple Galette

For the crust:

  • 1 ¼ cups plain flour

  • 1 tbsp coconut or raw sugar (or regular sugar)

  • ¼ tsp salt

  • 115g cold butter, cubed (or use a plant-based butter if dairy-free)

  • 2–4 tbsp ice water

For the filling:

  • 2–3 apples, thinly sliced (any crisp variety like Pink Lady or Granny Smith)

  • 1 tbsp lemon juice

  • 2 tbsp coconut sugar or maple syrup

  • ½ tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • 1 tsp arrowroot starch or cornflour (helps thicken the juices)

  • 50g melted butter

To finish:

  • 1 egg (for egg wash, optional)

  • Extra sugar and cinnamon for sprinkling

  • Optional: drizzle of maple syrup or honey after baking


Instructions:

1. Make the pastry dough:

  • In a bowl or food processor , mix flour, sugar, and salt.

  • mix in the cold butter using your fingers or processor until it looks like coarse crumbs.

  • Add ice water 1 tbsp at a time until the dough comes together.

  • roll into a disc and chill for 30 minutes.

2. Prepare the apple filling:

  • Slice apples

  • Toss sliced apples with lemon juice, coconut sugar, cinnamon, nutmeg, and starch. Let sit while dough chills.

(Or assemble the apples on the pastry and then pour over mixture, easier to make it look pretty this way )

3. Assemble the galette:

  • Arrange the apple slices in the center, leaving a 5 cm border.

  • Fold edges over the apples, overlapping slightly. It’s meant to be rustic!

  • Brush crust with egg wash and sprinkle with sugar + cinnamon. (optional)

4. Bake:

  • Bake at 190°C (375°F) for 35–40 minutes or until golden and bubbling.

5. Serve:

  • Let cool slightly. Serve as is, or with yogurt, crème fraîche, or vanilla ice cream.
