Soft & Chewy Spelt Flour Chocolate Chip Cookies

A naturally sweetened treat that hits the spot every time

There’s something about a soft, chewy cookie fresh from the oven that feels like a warm hug — especially when it’s made with wholesome, nourishing ingredients. These spelt flour chocolate chip cookies have become a regular in our kitchen, and for good reason. They’re quick to whip up, easy on the tummy, and just sweet enough to satisfy without being overpowering.

I used carob chocolate in this batch, which adds a rich, almost caramel-like flavor that pairs beautifully with the nuttiness of spelt. But feel free to use whatever you have on hand — organic or non-organic chocolate chips both work perfectly here.

Ingredients

  • 1 ½ cups spelt flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup softened butter

  • ⅓ cup maple syrup

  • 1 egg

  • 1 tsp vanilla extract

  • ½ cup chocolate chips (or chopped carob chocolate, which I used!)

Optional Add-ins:

  • A spoonful of almond meal for extra softness

  • A dash of cinnamon

  • Chopped walnuts or sunflower seeds for added crunch

Instructions

  1. Preheat your oven to 175°C (350°F) and line a baking tray with parchment paper.

  2. In a mixing bowl, cream the butter and Maple (or whisk together oil and maple syrup if using those).

  3. Add the egg and vanilla extract, mixing until well combined.

  4. Fold in the spelt flour, baking soda, and salt, stirring just until the dough comes together — don’t overmix!

  5. Stir in your chocolate or carob chips, along with any optional extras you love.

  6. Scoop out tablespoon-sized portions, roll into balls, and gently flatten them on the tray.

  7. Bake for 9–11 minutes, or until the edges are just turning golden.

  8. Let them cool on the tray for 5 minutes — they’ll firm up as they cool — then transfer to a wire rack (or sneak one warm while no one’s watching).

Whether you use carob, rich dark chocolate, or a mix of both, these cookies are a nourishing twist on a classic favorite. Enjoy them warm with a cup of tea, share them with the kids, or keep a stash in the freezer for future you — you deserve it. 🍪
