20 Min- Instant Pot Creamy Tuscan Chicken and Rice

This Instant Pot Creamy Tuscan Chicken and Rice is the perfect one-pot meal that brings together tender chicken, creamy sauce, and flavorful rice in a quick and easy dish. With the rich combination of sun-dried tomatoes, garlic, spinach, and a touch of Parmesan, this recipe is full of Mediterranean-inspired flavors. Ingredients:

  • 2–3 chicken thighs or breasts (boneless, skinless)

  • 1 ½ cups jasmine or basmati rice (rinsed)

  • 2 ½ cups chicken broth (or bone broth)

  • ½ cup sun-dried tomatoes (chopped, oil-packed Ideally in olive oil)

  • 2 cups baby spinach (fresh)

  • ½ cup grated parmesan cheese (plus extra for topping)

  • 1 small onion (diced)

  • 2 cloves garlic (minced)

  • 1 tsp Italian herbs (or mix thyme, oregano, basil)

  • Salt and pepper to taste

  • 2 tbsp butter or olive oil

  • Optional: A splash of cream or a dollop of sour cream at the end for extra richness

Instructions:

  1. Press “Sauté” on the Instant Pot. Add butter/olive oil and sauté onion + garlic until fragrant (about 2–3 min).

  2. Add chicken and sear lightly on both sides (no need to fully cook).

  3. Add rice, broth, sun-dried tomatoes, Italian herbs, salt and pepper. Stir gently to combine.

  4. Pressure cook for 8 minutes. Natural release for 5–10 minutes.

  5. Stir in baby spinach and parmesan while it’s still hot (spinach will wilt beautifully).

  6. For extra creaminess: Stir through a splash of cream or a spoon of sour cream if you want it super lush.
