Hidden Veggie Oat Cookies

Ingredients:

  • 1 cup rolled oats

  • ½ cup wholemeal flour

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • 1 small zucchini (grated & squeezed of liquid)

  • 1 small carrot (grated)

  • ½ cup mashed banana or unsweetened applesauce

  • ¼ cup nut butter

  • 2–3 tbsp honey or maple syrup

  • ¼ cup raisins or dark choc chips (optional)

Method:

  1. Preheat oven 180°C. Line tray.

  2. Mix oats, flour, baking powder, cinnamon.

  3. Add veggies, banana, nut butter, and honey. Stir to form dough.

  4. Spoon onto tray, flatten slightly.

  5. Bake 12–15 mins until golden.
