Refined Sugar-Free Jam (with Honey)

Ingredients (makes ~2 small jars):

  • 4 cups fresh or frozen berries (strawberries, raspberries, blueberries, or mixed)

  • ¼–⅓ cup raw honey (adjust to taste + sweetness of fruit)

  • 2 tbsp lemon juice (helps preserve + balance flavor)

Method:

  1. Cook the fruit – In a saucepan, add berries and lemon juice. Heat on medium, stirring, until fruit begins to break down and release juice (5–10 minutes).

  2. Sweeten – Stir in honey. Taste and adjust depending on fruit tartness.

  3. Thicken – Continue simmering for 10–15 minutes until it reduces slightly.

    • Option A (traditional style): Let it reduce naturally until thick.

    • Option B (chia style): Stir in chia seeds and simmer another 1–2 minutes, then remove from heat. It will thicken more as it cools.

  4. Store – Pour into clean jars, let cool, then refrigerate. Keeps for about 2 weeks in the fridge or longer if frozen.
